Braised Sea Cucumber with Scallions

Ingredients:
- 400g sea cucumber (soaked and cleaned)
- 3 large scallions, cut into sections
- 30g ginger, sliced
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon sugar
- 1 tablespoon Shaoxing wine
- 200ml chicken stock
- 2 tablespoons vegetable oil
- Salt to taste
- Cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoons water)
Instructions:
- Heat oil in a wok over medium heat. Add ginger and scallions, stir-fry until fragrant.
- Add the sea cucumber and stir-fry for 2-3 minutes.
- Add soy sauce, oyster sauce, sugar, and Shaoxing wine, stir to combine.
- Pour in chicken stock and bring to a boil. Reduce heat to low and simmer for 20-30 minutes until the sea cucumber is tender.
- Adjust seasoning with salt. Thicken the sauce with cornstarch slurry if necessary.
- Serve hot, garnished with scallions.
